‘Hyde County Cook Book’

ALL-AT-ONCE SPAGHETTI
Mrs. Iberia R. Tunnell
1 tbsp. cooking oil
1 large onion, chopped
1/2 lb. ground beef
1 1/2 tsp. salt
Pepper to taste
2 cans tomato sauce
1 1/2 cups water
1/4 lb. uncooked spaghetti (half an 8 oz. pkg.)
Grated cheese
Heat oil in saucepan or skillet. Add onion and cook until soft. Crumble in the beef. Stir and fry until meat looses red color. Sprinkle with salt and pepper. Pour in tomato sauce and water, bring to a boil. Break spaghetti in half; sprinkle in a little at a time, stirring it into the sauce and keeping it separated. Cover tightly. Simmer 20 to 30 minutes. Stir once toward end of cooking time. Serve with cheese. Makes 3 to 4 servings. Double the recipe for a larger family.
WINTER-SQUASH CASSEROLE

2 eggs, separated
3 cups cooked, mashed squash
4 dashes pepper
1/8 tsp. allspice
Nutmeg
1/4 cup rich milk
1/2 tsp. salt
1 tbsp. sugar
1/8 tsp. paprika
2 tbsp. butter, melted
Beat egg yolks — add other ingredients except the nutmeg. Beat egg whites stiff and fold into the squash mixture. Pour into a greased casserole and sprinkle nutmeg lightly over the top. Bake at 350 degrees for 25 minutes. Serve hot. Goes well as a vegetable for any meal.
PONE BREAD

2 tsp. salt
4 cups corn meal (sifted if coarse)
1/2 cup shortening
1/4 cup white sugar
1/2 cup flour
1/4 tsp. soda
Scald the above with 6 cups boiling water. Add 1 pint of molasses. Stir 15 minutes to get smooth. Pour in center of hot greased pan (a tube pound cake size preferred). Bake in 325 degree oven 1 1/4 hours. Leave in oven 10 minutes after heat is turned off. Take out, cover with damp cloth and let stand in pan 1 to 2 hours.
