Backwater Jack’s takes People’s Choice at Iron ‘Eagle’ Chef

PEOPLE’S CHOICE: Jessica Williams, cook in chief at Backwater Jack’s Tiki Bar and Grill, took the People’s Choice Award at the third-annual Iron “Eagle” Chef held Tuesday at First Christian Church in Washington. The event is a major fundraiser for Eagle’s Wings Food Pantry and pits three local chefs against one another in a friendly competition to see who can come up with the best meal using a required ingredient. This year’s required ingredient was canned tuna, and the results were flavorful. Williams said she dug back into her roots to come up with her winning tuna cakes — a take on the fish cakes her grandmother made when she was growing up — and added her own flair with remoulade and fresh salsa. Her invention may just end up on the menu at the popular waterside restaurant. Williams is pictured with WITN weatherman and emcee of the event, Matt Englebrecht. (Vail Stewart Rumley/Daily News)
