Backwater Jack’s takes People’s Choice at Iron ‘Eagle’ Chef

PEOPLE’S CHOICE: Jessica Williams, cook in chief at Backwater Jack’s Tiki Bar and Grill, took the People’s Choice Award at the third-annual Iron “Eagle” Chef held Tuesday at First Christian Church in Washington. The event is a major fundraiser for Eagle’s Wings Food Pantry and pits three local chefs against one another in a friendly competition to see who can come up with the best meal using a required ingredient. This year’s required ingredient was canned tuna, and the results were flavorful. Williams said she dug back into her roots to come up with her winning tuna cakes — a take on the fish cakes her grandmother made when she was growing up — and added her own flair with remoulade and fresh salsa.
