New mobile bakery launches in Swan Quarter

“The Rolling Pin”, a mobile bakery, will soon be up and baking in Swan Quarter. Owned and operated by Kaila Equils Williams (with help from her husband Michael Shane and other family members) it will have a semi-permanent location at 190 Oyster Creek Road in the village.

Williams explains that her maternal grandmother, Evelyn Stotesberry, was responsible for her love of baking: “At a very young age she introduced me to flour, butter, and her rolling pin – and I’ve been in love ever since!”

“I still have my nanny’s rolling pin, and to some, it is just another kitchen gadget. But to me it is my inspiration – my heart and soul!”

Although she holds down a full-time job with the Hyde Couty Board of Education, she has long dreamed of opening her own bakery. For many years she has baked for her family and friends on special occasions, but she wanted to expand to retail sales.

In 2023 she began to pursue that dream in earnest. “I’m not ready to retire yet, but I knew I could bake in the evenings and weekends and still work, too. I just needed a suitable place to do it.”

She spent many months putting together a business plan and researching her options for a location in Swan Quarter for a bakery. After several lost opportunities, Williams and her husband Michael finally settled on a concession trailer that could be outfitted and permitted for baking custom cakes, cinnamon buns, and other sugary sweets.

The self-contained trailer is outfitted with state-of-the-art equipment and can be easily relocated to serve special events at other locations. It has been inspected by the Hyde County Health Department and meets all North Carolina laws and regulations.
