CPS premieres cookbook

CHOCOWINITY–Looking for a delicious recipe for taco soup, corn pudding or chocolate ice cream cake?

If the answer is yes, the newly-published Chocowinity Primary School cookbook may be exactly what you are looking for.

Inspired after seeing cookbooks published by local churches, members of the CPS Parent-Teacher Organization thought it would be a good fundraiser to help the school with the purchase of new computers. PTO officer Tanya Dixon secured a cookbook publishing kit and passed the information along to first grade teacher Candice Strickland and first grade assistant Stephanie Fore, who agreed to serve as editors/coordinators of the publication..

They began working on the project earlier in this school year.

“We sent out fliers explaining what we were trying to do and asking for submissions from students and staff,” Strickland said.

Soon, more than 100 recipes began pouring in from staff, students and family members. Among those featured in the book are recipes for crunchy cheese wafers, grape salad, sweet potato casserole, grilled turkey breast, apple dumplings. chocolate pie, peanut butter balls and cranberry jello salad.

The cookbook is now available for $10 each.

The immediate response has been encouraging, and there is already discussion of putting together an expanded version of the cookbook once the current version has sold out, according to Strickland and Fore.

POTATO SOUP

1 package frozen hash browns; 1 box or 2 cans of chicken broth; 2 cans cream of chicken soup; 8 ounce block of cream cheese.

Add above ingredients (except cream cheese) to crock pot. Salt and pepper to taste. Cook for five hours. Add cream cheese and stir frequently for 30 minutes.

EASY LEMON CREME PIE

1 (8 ounce) package cream cheese; 1 can of sweetened condensed milk; 1/3 cup lemon juice; 1 teaspoon vanilla; 1 graham cracker crust.

With a mixer, mix together the cream cheese and sweetened condensed milk. Add the lemon juice and vanilla. Pour into a graham cracker crust and refrigerate.

STRING BEAN WRAPS

2 cans whole string beans; 1/2 cup brown sugar; 1/2 stick butter; 1 pound bacon.

Preheat oven to 350 degrees. Cut bacon strips in half, wrap five to six beans in each strip of bacon and place in a baking dish side by side. Melt butter and sugar together. Mix well and pour evenly over the wraps. Bake in oven for approximately 30 minutes.
